These classic fluffy pancakes are a family favorite that never gets old. The secret is in the buttermilk and not overmixing the batter.
Mix flour, baking powder, sugar and salt in a large bowl.
Make a well in the center and pour in milk, egg, melted butter and vanilla.
Mix until smooth but don't overmix.
Heat a lightly oiled griddle over medium-high heat.
Pour about 1/4 cup batter for each pancake.
Cook until bubbles form on the surface, then flip.
Cook until golden brown on both sides.
Serve with maple syrup, fresh berries, and whipped cream.
